2 lbs zucchini ¼ cup butter or margarine ¼ cup Parmesan cheese Instructions: Wash and slice zucchini into ¼ inch slices. Place into microwave-safe casserole with lid. Add 3 tablespoons water. Microwave on high 8 minutes. Drain water. Toss zucchini lightly with butter and Parmesan cheese. (serves 6-8)
